▸ Description

Hello lovelies as you guys know now more than ever I am committed to keeping things in the kitchen Quick easy nutritious and delicious, which is why this month I am sharing some of my very favorite make-ahead lunch ideas that can all be prepared during your Sunday meal prep And then enjoyed through the week and today it is all about this super tasty chicken and asparagus Stir-fry that comes together in literally no time So the first and most important step in this stir-fry is to mix up your sauce now to get started I have got some chicken broth here in my bowl and to that I'm going to be adding some soy sauce So we want a nice savory flavor happening. I've also got some honey here So we're gonna balance that savory flavor out with some sweet as well You could use agave in this recipe if you wanted to swap out instead of honey or even some brown sugar would work really well Here we just want a nice sweet flavor profile to balance all of that soy sauce Then I have got some garlic headed in here some minced garlic I've got some freshly grated ginger one of my favorite ingredients, especially in any sort of Asian stir-fry and Finally, I'm going to be adding just a little bit of cornstarch now You don't need too much. But what the cornstarch does is when it hits the pan It's going to help this sauce Thicken up a little bit and really sort of stick to all of our beautiful chicken and vegetables So you always want to add a little bit of cornstarch to any stir-fry sauce? As soon as that sauce is all whisked together. We can just set it aside Well, we get to work on cooking up our stir-fry now I've got a nice nonstick skillet heating up on the stove over medium-high heat and to that I just want to add a nice glug of oil and let that oil heat up until it's nice and hot Soon as my oil is nice and hot. I'm going to go ahead and get my chicken into the pan now in this recipe I am going to be using some boneless skinless chicken breast that I have just cut into cubes You also have the option to do this with some chicken thighs if you want to you could even do this with some ground chicken If you want to or you could swap in some pork some beef would be really good here You also could do some shrimp or even some salmon would be super tasty Once my chicken is in the pan I just want to season it liberally with a little salt and pepper just get it nice and seasoned up and then I'm going to Let it cook away until it is no longer pink and it starts to get nice and golden around the edges At this point it is time to get my greens into the pan So like I said, I am using some asparagus in this recipe I am a huge fan of asparagus and so is the rest of my family But you could just as easily use some broccoli here some snap peas some spinach some kale would work in this recipe Or even some green beans would work really well. You basically just want to get some good greens happening in your pan What I really love about asparagus is that it cooks in absolutely no time So within one to two minutes, you'll start to notice it turning bright green and that is a great sign It means it's time to get your sauce into the pan as soon as that sauce hits the pan great things are going to happen First of all, you're gonna start to smell all of that amazing garlic and ginger Which is so super fragrant and flavorful and guys it is really this simple Basically as soon as your asparagus is tender and nice and bright green you can take this off the heat and get it served up I like serving it on a bed of plain rice, but honestly you can serve it. Basically, however you like It's going to be delicious. No matter what I like topping it with some sesame seeds for good measure and seriously guys There's just so much to love here. It's sweet.
