What is going on, YouTube? So about two weeks ago, I posted my breakfast on Instagram from this cafe in Dallas called Star Cafe. Now, just so happened that that day, they were serving sweet potato tater tots. And when I tell you that people went bananas for these tots, they did. So I posted the picture, and everyone started saying, hey, Fitbit and Cook, come out with your own version. So I got in the kitchen today and began to experiment. And I gotta say, for my first pass, these tots are actually pretty good. And I already got some ideas for version two. But until then, check out this recipe, because I think you're really gonna like them. First thing we're gonna do is peel some sweet potatoes. After that, we're gonna parboil them by dropping them in boiling water for about 15 minutes. Then remove them from the water and allow them to cool to room temperature. And once they're cool, we're gonna grate the sweet potato into a bowl. The shavings should be firm, yet soft enough to stick together. We're gonna create the tots by rolling them up in your hand and forming mini cylinders. Repeat until you use all the sweet potato. Place the tots on a baking rack or nonstick baking sheet and generously spray them with olive oil, then top them off with a little sea salt. Bake these for about 40 minutes at 430 degrees, flipping them halfway so all sides are nice and crispy. Now, I know these look good, but before devouring, allow them to slightly cool and firm up just a bit.
